On the longest night of December, at the solstice called tōji 冬至, whole yellow fruits are set afloat in the bathtubs and bathhouses of Japan. This is yuzuyu 柚子湯, the yuzu bath; the fruit releases the oils of its rind into the hot water, and the steam fills with a sharp, floral citrus scent. Belief holds that the bath drives off the illnesses of winter. For a fruit to warm an entire country on the darkest night of the year is an honor few kitchens can offer.

Yuzu 柚子 is a wrinkle-skinned citrus grown in Japan for more than a thousand years; neither lemon nor mandarin, its aroma stands between the two and deeper than either. Japanese chefs use its zest far more than its juice: a few gratings of rind change the weather of a whole plate. It is also the heart of ponzu.

The Yuzu Roll is that scent translated onto a plate: the sweetness of seafood brightened by yuzu’s fresh tartness.

We stand on a coast that speaks citrus fluently. Yuzu is not a foreigner here.
